Chocolate Chip Sweet Muffins

yield 6 regular size muffins
BASE INGREDIENTS
¾ c all-purpose flour ¼ cup sugar

1 teaspoon baking powder ¼ teaspoon salt
¼ cup milk 2 Tablespoons vegetable oil
¼ teaspoon vanilla ¼ cup chocolate chips
1 egg
Topping
1 ½ tablespoon granulated sugar 1 Tablespoon brown sugar
INSTRUCTIONS: Preheat oven to 400 degrees F. Use muffin liners in muffin pan. Mix dry ingredients and chocolate chips in large mixing bowl. Make a well in center of dry ingredients. Whisk egg, add vanilla and egg to milk and mix. Pour liquid ingredients into well of dry ingredients and mix just until moistened. Batter will be slightly lumpy. DO NOT OVERMIX! Fill muffin cups 2/3 full (recipe yields 6 regular sized muffins). In small bowl combine 1 ½ tablespoon sugar and 1 tablespoon brown sugar. Sprinkle tops with topping.
Bake 20-25 minutes or until golden brown and inserted toothpick comes out clean.
We did do this recipe in class and I will say my group's muffins (pictured) turned out beautifully.
