I actually anticipated this recipe being a lot harder than it turned out to be in my opinion. Before this, I'd never made pasta by hand before and I'm very glad that I did. I would definitely consider recreating this recipe at home! Much easier than you'd think as long as you follow a recipe. Having a pasta roller might be helpful as well but isn't entirely required. It was kind of hard when the dough would stick to the roller but it was quickly overcome with some flour. Some recipes will ask you to let your noodles dry for a while before cooking, or to use them right away. Personally, I recommend using them right away, they cook fast and are nice and soft.
